Marmalade sits in Santa Fe – the quieter, less chaotic end of Siargao – and it’s doing the best toasties on the island. Sourdough base, serious fillings (the bacon jam and chorizo are the ones to get), and coffee that’s actually dialed in. The ube matcha is a signature drink worth ordering, though go easy on the milk if you want to actually taste it. Owners Ma’an and Felmar run the floor themselves most days, which explains why the service feels personal rather than transactional. Dog-friendly, Starlink WiFi, alternative milks – they’ve thought through the details. There’s indoor aircon and outdoor seating, so you’re not stuck sweating through your coffee. Marmalade also runs a local run club, which is either very useful or completely irrelevant to you depending on who you are. Either way, it’s the kind of place that becomes a daily stop once you’re based in Santa Fe.
