CEV does one thing and does it so well the whole island talks about it: raw fish, done two ways, catch of the day turned into ceviche or straight-up local kinilaw. If you’re the type who’s cautious about raw fish, this is the place that converts you, and if you already love it, you’ll be booking a second sitting before you’ve finished the first. Get the pacifico ceviche and the lumpia spring rolls with blue cheese sauce, they’re the two dishes everyone at the table ends up fighting over. The catch of the day changes, so ask what came in that morning rather than defaulting to the menu photo. Prices sit a bit above your average GL spot but portions and quality back it up, and the house IPA is worth a glass while you wait. They’re solid on dietary requests too, gluten-free and vegetarian both get handled properly, not just a sad side salad. Book 2-3 days ahead if you want a table after 6pm, this isn’t a place you casually stroll into on a Friday night. Show up right at opening (5:30pm) if you didn’t plan ahead and you’ve got a decent shot. Not the spot for a quiet, private dinner, it’s tight, busy, and communal by nature, so go in expecting energy rather than intimacy.
